Chicken Breast Scampi
Ingredients:
1 1/2 lb. skinless, boneless chicken breast halves (4 to 6)
1 can (10 3/4 oz.) cream of chicken soup
1/4 cup water
2 tbsp. butter
2 tsp. lemon juice
2 cloves garlic, minced or 1/2 tsp. garlic powder
Hot cooked pasta
Preparation:
Heat the butter in a skillet over medium-high heat. Add the chicken and cook for 10 minutes, or until it’s browned on both sides.
Remove the chicken and set aside.
Stir in the soup, water, garlic and lemon juice. Heat mixture to a boil.
Return the chicken to the skillet and reduce the heat to low, covering and cooking for five minutes.
Serve the chicken over the pasta.
