Baked Chicken and Dumplings Casserole Recipe

Baked Chicken and Dumplings Casserole

Ingredients:


cooking spray
1/2 cup milk
1 cup flour
2 tablespoons vegetable oil
1/4 teaspoon salt
2 teaspoons baking powder
6 boneless skinless chicken breast halves, uncooked
1 medium onion, finely chopped
1 (10 ounce) package frozen sliced carrots
2 stalks celery, chopped
1/4 teaspoon ground pepper
1/2 teaspoon dried sage, crushed
2 cans (13 3/4 ounce each) chicken broth

Directions:

Preheat oven to 325 degrees F. Coat a 2 1/2-quart casserole dish with cooking spray.

In a medium bowl, combine oil and milk. Gradually stir in flour, salt, and baking powder. Mix well
into a doughy consistency. 

Place chicken breasts in bottom of casserole dish. Cover chicken with celery, onion, and carrots. Sprinkle pepper and sage the vegetables, then pour broth over everything.

Using the dough mixture, form 2-inch balls and drop into the casserole dish. Cover well and bake for 1 1/2 hours.
