Chicken Casserole Recipe 1

Chicken casserole is such a versatile meal.  You can bring almost any style of cooking into the form of a chicken casserole.  For this recipe, we used a small amount of curry and lemon juice for a little unexpected flavor. 

Be sure your sauce base is not watery.  Cook your broccoli thoroughly before you add them; undercooked vegetables are unappetizing in any casserole. 

The cheese adds a layer of rich flavor and a bit of saltiness. 

If desired, you can add a sprinkle of bread crumbs or crushed potato chips for a wonderful crunch on top.


Ingredients:

1 (6 1/2 ounce) box stuffing mix (top of stove type)
2 cups cooked chicken (about 8 ounce), cut into small cubes
1 can cream of mushroom soup
1 can cream of chicken soup
1 soup can nonfat milk
1 teaspoon poultry seasoning


Preparation:


Preheat oven to 325 degrees F.

Prepare stuffing according to package directions. Set aside. Place chicken into a 13x9 baking pan. Mix the two soups with the milk and pour over chicken. Sprinkle with poultry seasoning. Spread stuffing
over top.

Bake for 30 minutes. Let stand 10 minutes before serving.
