Chicken Vegetable Soup Recipe
Chicken Vegetable Soup
Ingredients:
1 tablespoon olive oil
1 onion, chopped
1/2 pound skinless, boneless chicken breast meat - cut into bite-size pieces
2 cloves garlic, minced
1 cup chopped cauliflower
1 cup sliced carrots
2 cups whole peeled tomatoes with liquid, chopped
1 cup broccoli florets
1 cup chopped fresh spinach
1 cup chopped celery
4 cups fat free chicken broth
6 drops hot pepper sauce
salt and pepper to taste
Preparation :
Heat oil in a saucepan over medium heat.
Add the chicken, saute for 5 to 10 minutes or until browned. Set aside.
In the same saucepan add the onion, carrots and garlic. Saute for 3 to 5 minutes.
Add the broccoli, celery, cauliflower, tomatoes, the chicken and the chicken broth.
Stir together well and bring to a slow boil. Reduce the heat to low and simmer for 25 to 30 minutes.
Add the spinach and hot pepper sauce along with salt and pepper to taste.
