Chicken Dumpling Soup
Ingredients :
1/2 cup cold water
6 skinless, boneless chicken breast halves
1/2 cup all-purpose flour
6 cups water
2/3 cup milk
1 tablespoon butter
2 cups all-purpose baking mix
salt and pepper to taste
Preparation :
In a large pot over medium heat, simmer chicken in 6 cups water until cooked through.
Remove the chicken from the pot, cool and shred.
Return the chicken to the pot and add in butter, salt and pepper. Cook until the chicken is tender, 15 to 60 minutes.
In a bowl, stir together the baking mix and milk until smooth.
In another bowl, stir together 1/2 cup cold water and flour until smooth.
Slowly add the flour mixture into soup while stirring; bring soup to a rolling boil.
Drop the dumplings made from the baking mix by tablespoonfuls into the boiling water.
Reduce heat to a simmer and cook, without a cover, for 10 minutes. Then cover and cook 10 for minutes longer. Serve hot.
