Chicken and Dumplings Recipe

Dumplings can be made in several ways. Some grandmas are famous for their feather-light dumplings, and other families recall eating “hockey pucks.” Getting the dumplings to come out right is a trick.
Be sure you don’t stir the biscuit mix too long. Over-mixing can cause the biscuit dough to lose air pockets, making them tough and chewy.
Ingredients:
3 celery ribs, chopped
1 cup sliced carrots
3 (14.5 ounce) cans chicken broth
1/2 teaspoon poultry seasoning
1/8 teaspoon pepper
3 cups cooked, cubed chicken breast
1 2/3 cups baking mix
2/3 cup milk
Preparation:
In a Dutch oven coated with cooking spray, saute celery and carrots for 5 minutes.
Stir in the chicken broth, and add the poultry seasoning and pepper.
Bring to a boil, then reduce the heat and simmer uncovered. Add the chicken into the mixture.
To make the dumplings, combine biscuit mix and milk. Drop by flattened tablespoonfuls into the simmering broth. Cover and simmer for 10-15 minutes.
