Chicken Casserole Recipe
Chicken casserole is such a versatile meal. You can bring almost any style of cooking into the form of a chicken casserole. For this recipe, we used a small amount of curry and lemon juice for a little unexpected flavor.
Be sure your sauce base is not watery. Cook your broccoli thoroughly before you add them; undercooked vegetables are unappetizing in any casserole. The cheese adds a layer of rich flavor and a bit of saltiness. If desired, you can add a sprinkle of bread crumbs or crushed potato chips for a wonderful crunch on top.
Chicken Casserole
Ingredients:
6 skinless boneless chicken breast halves - cooked and diced
2 heads broccoli , steamed or boiled and chopped
3 (10.75 ounce) cans condensed cream of chicken soup
1 cup mayonnaise
1 teaspoon curry powder
3 tablespoons lemon juice
8 ounces shredded Cheddar cheese
Preparation:
Place broccoli and diced chicken in a lightly greased 9x13 inch baking dish.
In a medium saucepan combine soup, mayonnaise, curry powder and lemon juice.
Bring to a boil over low heat, stirring constantly.
Pour mixture over chicken and broccoli, and top with shredded cheese.
Bake at 350 degrees for 20 minutes.
