Chicken Cordon Bleu Recipe
Chicken Cordon Bleu
Ingredients:
6 boneless, skinless chicken breast halves (1 1/4 lb.)
3 slices deli ham, cut into halves
3 slices Swiss cheese, cut into halves
1/4 cup unseasoned dry bread crumbs
1 Tbsp. Dijon style mustard
2 Tbsp. minced fresh parsley
3 cup cooked rice
cooking spray
Preparation:
Preheat oven to 350°.
Flatten chicken breasts between 2 pieces of plastic wrap to 1/4 inch thickness, using flat side of meat mallet.
Brush mustard on 1 side of each chicken breast; place 1 slice each of ham and cheese over mustard.
Roll up each chicken breast from the short end of each; secure with wooden picks.
Spray the top of each chicken roll with cooking spray. Sprinkle with bread crumbs.
Arrange chicken rolls in a 9x12 baking dish. Cover and bake 10 minutes.
Uncover then bake an additonal 20 minutes or until chicken is no longer pink in center.
Stir the parsley into rice and serve with chicken.
